It started with a vision, a vivid image of myself walking through endless fields of sharp-leafed agave. When Alto Canto, the highest tequila distillery in the world, invited me to visit, I could not say no. Nestled in the rugged Sierra mountains of Jalisco, this place offers more than just tequila. It offers a connection to the land, history, and spirit that few places can match.


The journey to Alto Canto is as challenging as it is rewarding. The roads wind through steep inclines and loose gravel, demanding respect and patience. But the experience is filled with contrasts: tearing through jungle mud in side-by-sides, then arriving at glass-walled cabins hidden among pine trees, where the atmosphere feels like Aspen meets Jalisco. This trip is not just about tasting tequila; it is about understanding the land and the spirit it produces.



The Land That Shapes the Spirit


The Sierra mountains hold a secret that shapes every drop of tequila produced here. Long ago, the dormant Tequila volcano erupted, covering the land with fire and lava. Over time, this volcanic activity left behind mineral-rich clay that nourishes the agave plants. This soil is the foundation of the agave’s unique character, giving the spirit a deep, stony minerality that sets it apart.


The altitude also plays a role. At over 2,000 meters above sea level, the air is thinner, and the agave grows slower, concentrating its flavors. Tasting tequila here is like drinking a geological legacy—complex and unapologetically funky, balanced by notes of fruit, floral hints, and citrus.


A Philosophy Rooted in Simplicity


Alto Canto’s founder follows a philosophy that feels radical in today’s world: subtraction instead of addition. The tequila is made with only two ingredients, agave and water. No additives, no shortcuts. The land is treated as a partner, not a resource to be exploited.


This approach demands patience and respect. The agave plants take years to mature, and every step of production honors the natural process. The result is a spirit that feels honest and alive, a true reflection of its origin.

Along the way, the landscape shifts dramatically. One moment you’re racing through jungle mud in side-by-sides, the next you arrive at serene cabins with glass walls, surrounded by towering pines. This blend of wild and calm mirrors the spirit of the place untamed yet refined.

To truly understand Jalisco, you must confront it head-on. This means diving into hidden muddy waterfalls, facing old fears on horseback, and then soaring over the valley by helicopter. From above, the blue agave stretches for miles, silent and endless.


In that silence, something becomes clear: spirit is not something you make. It is something you reveal when you stop to listen. This journey is about more than tequila; it is about finding your own North Star, the guiding light that calls you forward.
